Chicken Fajita Bowl

Black beans and chicken stack protein and fiber in one bowl, with avocado for the healthy fats these plans lean on.

Everything cooks in one skillet, so cleanup is quick.

Ingredients

  • chicken breast, sliced4 1/2 oz (128 g)
  • sauteed peppers and onion1 cup (150 g)
  • black beans, rinsed1/2 cup (86 g)
  • avocado1/4
  • salsa2 tbsp (30 g)
  • cooked brown rice1/3 cup (63 g)
  • olive oil1 tsp (5 ml)

Directions

    Heat the olive oil in a skillet over medium-high heat.

    Cook the chicken strips for about 5 minutes, until browned and cooked through.

    Add the peppers and onion and cook for 4 minutes more.
