Baked Cod with Sweet Potato

White fish and tahini keep this plate light but protein-strong, with sweet potato for slow carbs and green beans for fiber.

It is one of the gentler dinners in the plans — easy to chew and easy to digest.

Ingredients

  • cod fillet6 oz (170 g)
  • sweet potato cubes1 cup (200 g)
  • green beans1 cup (100 g)
  • tahini1 tbsp (15 g)

Directions

    Heat the oven to 425°F (220°C) and line a sheet pan with parchment.

    Toss the sweet potato cubes with a little oil, salt, and pepper and roast for 15 minutes.

    Add the green beans and the cod to the pan and roast for 10 minutes more, until the cod flakes easily.
