Greek Lemon Chicken with Potatoes

Yogurt-based tzatziki adds calcium to a lean chicken plate — Mediterranean flavor doing double duty for bones and taste.

Roasted potatoes and green beans make it a complete plate you can put on one sheet pan.

Ingredients

  • grilled chicken breast4 1/2 oz (128 g)
  • roasted potato wedges3/4 cup (150 g)
  • roasted green beans1 cup (100 g)
  • tzatziki2 tbsp (30 g)
  • side salad1 handful
  • whole-wheat pita1/2

Directions

  1. 1

Heat the oven to 425°F (220°C). Toss the potato wedges with a little oil, salt, and oregano and roast for 15 minutes.

  2. 2

Add the green beans to the pan and roast for 10 minutes more.

  3. 3

Grill or pan-sear the chicken until cooked through and let it rest briefly.

  4. 4

Plate the chicken with the potatoes, green beans, and side salad, and serve with the tzatziki and pita.

Tips

  • ✓Roast the potato wedges and green beans on one sheet pan while the chicken cooks so everything finishes together.
  • ✓A yogurt-based tzatziki keeps the sodium and fat lower than bottled sauces.
